Trying to add more raw, healthy foods to your diet?
Chia seeds are low in calories, rich in fibre and high quality protein, full of Omega-3 fatty acids and antioxidants and easy to find in your local health food store. They are also perfect for making a super quick, no faff raw jam.
Chia seeds puff up when they hit water, developing a gelatinous outer-layer, in fact, they can soak up 10 times their own weight in liquid, so when you add them to purified fruit they act to set it to a jam-like consistency.
You’ll need some kind of food processor for this recipe.
1 medium punnet of strawberries
6 table spoons of chia seeds
5 medium dates
1 tablespoon honey
1. Pit the dates and remove the stems on the strawberries
2. Put the dates, strawberries and honey into the blender and process until almost smooth (it’s nice to have a few lumps left for a jam-like consistency)
3. Put the processed mixture into a bowl and slowly add the chia seeds, bit by bit, stirring constantly (you may need more or less chia seeds depending on how much puree you have made. You will know when the jam is done as it will start to have a jelly-like consistency)
4. Eat and enjoy!
